SHRIMP AND BROCCOLI ALFREDO with Pasta, flambeed with Brandy

This dish can be made with just Broccoli alone!!You can also substitue cut up (cooked) Chicken or Turkey and instead of flambeing with Brandy, add a splash of Sherry.

INGREDIENTS:
6 oz. Pasta
1 small stalk Broccoli
1 slice Tomato
1/2 Lemon (or some Lemon Juice)
1/4 stick Butter
Garlic Clove
8 Shrimps
1 Cup Heavy Whipping Cream
about 1 shot of Brandy



DIRECTIONS:
Start water and cook Pasta. Cut off stem of Broccoli, discard, then chop up into bite size pieces. 


 
Rinse & Boil for 10 min.



If you cut off the end of Garlic cloves.
You can peel them very easily quickly. Now dice up Garlic. Get your Shrimps ready. Rinse under cold water.
SAUTE PROCESS
Take about 1/2 stick of Butter, Shrimp and Garlic and saute on low flame allowing Butter to slowly melt. 


Get ready to flambe. Remember, keep your distance and have your hair pulled back. It is safer to flambe from a small container than a large bottle liquor. Pour in the Brandy, and tilt pan towards the flame. (If you are afraid to flambe, just lower the flame and gently pour in the Brandy, and let simmer on low for a few min. If you have an electric stove, use a long match (or a spaghetti noodle that you can light) and touch the flame to the saute. 



Allow the flame to dissipate. Alcohol is very combustible, thus by utilizing the process of flambeing, you burn OFF alcohol while allowing the sauce to savor the flavor of the Brandy. Now onto the finishing touches....
FINISHING TOUCHES
Add the Heavy Whipping Cream, increase the flame to high. The Cream will  to the top, try to keep it at that level by lowering the flame bit by bit, for a few minutes, this is what makes the sauce thick. 


 

 

 

 
Now, lower flame and simmer for a couple of minutes. Slice a Lemon in half, remove seeds. Squeeze 1/2 a Lemon into Sauce. Dice up 1 slice of Tomato. Drain Pasta and Broccoli, plate Pasta, pour Sauce on top and garnish with Broccoli and diced Tomatoes.

Easy and inexpensive to make ALFREDO SAUCE. This is the basic Cream Sauce that can be enhanced or added to Seafood, Beef, Veal, Chicken and Vegetable Entree's.

INGREDIENTS:
About 2 Tablespoons Butter
Generous pinches of Salt and Pepper
1 Cup or more of Heavy Whipping Cream
6-8 oz Pasta, cooked

DIRECTIONS:
Place the Butter, Salt, Pepper and Heavy Whipping Cream into a largish saute pan. On high flame, saute & stir every min or so until the Cream begins to rise up. Immediately lower the flame and simmer about 5 minutes, stirring every minute, until thickened.
Pour over Pasta, Seafood, Chicken & Veggie dishes.
